Serbian Salad
serves 4
Ingredients
- 2 parts Roma tomatoes (seeded, diced)
- 1 part green Bell peppers (diced)
- 1 part purple or yellow Bell peppers (diced)
- 1 part sweet onions (diced)
- Feta cheese (crumbled)
- 1 C olive oil
- 1/2 C red wine vinegar
- 1/2 C white vinegar
- 1 T dry mustard
- 1 t fennel (ground)
- 2 T lemon juice
- 1/8 C dried parsley
- salt & pepper
- Option: substitute fennel for peppers
Instructions
- Whisk together the oil, vinegars, mustard, fennel, lemon juice and parsley. Season to taste. Let sit for several hours.
- Prepare, then chill the tomatoes, peppers and onions separately.
- Just before service, mix together the tomatoes, peppers and onions together, top with the feta cheese, and drizzle the dressing on top.
- Plate and serve chilled.
